Trini Macaroni Pie

This dish is a part of the traditional Trinidadian Sunday lunch usually served with rajma (red kidney beans) and / or chinese style chunky vegetables. Macaroni Pie is one of the few Trinidadian dishes that I remember my Mom making ever since we were kids. It's one of the easiest and yet its taste is something that keeps you wanting more.The simplest way to make this is without adding any veggies to it, however, I like to add sweet peppers, carrots and onions just like my Mom did. Macaroni may not be easily available... I found some at a Mediterranean Mom and Pop Store so I would suggest trying Mom and Pop Groceries. Here is the recipe...
Ingredients:
1/2 pack macaroni
1 egg
1/2 lb grated cheddar cheese
28-32 oz evaporated milk
1 onion diced
1 carrot grated
1 green sweet pepper (cut into half and then into thin strips)
1/2 scotch bonnet pepper minced (any pepper will do)
salt to taste



1 tbsp butter
1 sprig of chive (green onion) finely chopped

Method:
1.Preheat oven to 350 F.
2.Boil macaroni in salt water until it is almost cooked, strain and pour into a bowl.
3.Add butter and into hot macaroni until it is melted, then add egg, diced onions, chives, grated carrots and sweet pepper and mix.
4.Add salt and scotch bonnet pepper to taste.
5.Add cheese and evaporated milk and mix.
6.Grease a baking dish and pour the mixture and sprinkle cheese over the top.
7.Bake at 350 F for 30 minutes until the top gets golden brown.

I made macaroni pie with stewed soya chunks this weekend and it was DELISH !!!
